Begin the Begin

Hello.
My name is Celeste Dolan and I am a cook, baker, artist and a recovering graphic designer.

I was born and raised in Rockford, Illinois just 90 minutes from Chicago. My favorite cuisines are Italian, French, Mexican, Japanese, regional American, but don't ask me to pick which cuisine I would choose if I were stranded on a desert island. I simply could not do it. I love baking and often try to incorporate savory with the sweet. There's nothing better than a savory concoction enveloped in a flaky pastry dough of some sort.

In 1998, I started a stint at cooking school. My class times were all over the place. Sometimes I would find myself driving down Lake Shore Drive in the dark at 5:30am to get to a meats class. Yes, I was cooking, plating and eating steaks, pork chops and ribs at 7:30 or 8:00 in the morning. Other times I would be mopping the floors at 10:00pm after just baking, assembling and decorating three of four cakes. This was happening all the while trying to juggle being a single mom and chasing after freelance graphic design work. 

By 2004 I knew I had to choose either graphic design or immerse myself in the world of food. So, I walked away from a 20-year graphic design career and started Celestial Kitchens. And now, after years of my friends and supporters telling me to write a blog I am finally doing so. My friends and I have a lot of ideas of where this might take us and I hope you will join us for the ride and no matter how winding the path may be it will always lead us to food. Talk soon!
